Oh look, another blizzard...

Yesterday was my day off so I slept in, had a leisurely breakfast, then ran some errands! I had to go back to the Kommune because when I went there to get my CPR card I was supposed to leave with at least my CPR # (I guess like a social security #) but the lady forgot to give it to me so I had to go back and get it so a. DIS could insure me after Feb 15 and b. so I could get a gym membership!

Afterwards, I went to SEVERAL grocery stores to find proper ingredients for the caesar chicken-pasta salad that I am going to make my family, which is A LOT easier said than done! Finally at the 3rd grocery store I found caesar salad dressing and feta cheese so I think I am good. The problem with Danish grocery stores:
1. they are tiny
2. they devote about 9 of 10 aisles to candy, desserts, more candy, etc.
3. apparently people only eat Thousand Island dressing here (bleck!)

I was also looking for ingredients for the different types of candies I can make for my family but 1. pretzels 2. hersey kisses 3. peanut butter chips and 4. spanish peanuts do not exist in Denmark. So, if any of my adoring fans have nothing better to spend their $ on than a care package to me, I would like it to contain pretzel rings, hersey kisses, and more smart wools (socks are not part of any recipe, but always a good idea to have on hand).

After coming home from the store I started all of my homework and worked on Danish until about midnight last night (reminder: I have to be up at 6:15 on school days). So needless to say, this morning was a little hectic but I finally got out the door (for the 2nd time b/c I forgot something the first time I left for the train), ran to the train station, and made it just in time for my class...which of course was cancelled! No email, no post on blackboard, just a sign on the classroom door saying that there was no reason why I had to be in Copenhagen at 8:30 in the morning.

But, after a rocky start my day got better! I started my first class at Copenhagen University, and of course the class is 100% DIS students! Oh well, I met some really nice people in that class so I'm actually really looking forward to it (despite the fact that a. it is going to crush me and b. it is 2.5 hours of philosophy every Tuesday night).

Today we were actually let out a little early from our class though because they are calling for (and now as I type mother nature is delivering) yet ANOTHER blizzard here in lovely Copenhagen. Once again the Danes are beside themselves, and by the time I got home after walking from the train station I had to go into the bathroom and towel off my entire head (including the hair that was under my hat) and am now drying all of the clothes I was wearing! Looks like a quiet night in Værløse for me tonight!

Food Log:
Breakfast: Monday I actually had toast with boysenberry jam which was awesome, today I had the usual
Lunch: Delicious sandwich made by top chef Katie Halpin
Dinner: Monday we had leek soup (SUPER healthy, made entirely of veggies, but it was actually really good!) Tonight we had pasta with like a parsley/mussel/garlic sauce!

  1. no pretzels!?!?! i thought you went to europe, not the middle ages! also, i bet you could subsitute a lot of the other suff, like maybe chocolate coins instead of kisses, and regular peanutbutter and peanuts.

p.s. i tried to make those peanut cluster the other night, but i burned the chocolate. wah waaaaaaaaah.

  2. Colleen - Katie is a recipe follower (like me) you are a recipe improviser (like dad)!

Katie - Does February 2nd have the same significance in Denmark as in the US??? If not, you might want to implement that and get everyone calmed down about the whole winter/snow thing! Just lie to them and tell them that the groundhog did whatever and that means winter will be over in 6 short weeks! That should cheer everyone up!

Did all those recipes come across your email OK? I sent them as attachments, but was not sure if you could a. open or b. print them.

And WHY do the grocery stores commit so much space to candy and "junk" if the Danes are suppose to be this healthy nation??? Maybe ask Ann that!
I wonder how pretzels would travel in a care package? Maybe if we wrapped them in the smart wools......
Stay dry and warm....winter CAN'T last much longer!!

  3. haha, I know right, I tried explaining what a pretzel was and Anne looked at me like I had 4 heads!!! I was thinking if worst came to worst I could use something other than kisses but I am afraid the chocolate will melt wrong ya know (like coins would just run off the pretzel, it has to be something tall that you can press down...

Yep, got the recipes, thanks!! And no, no groundhog day for the Danes, so sad, what is a country without meaningless holidays???
